Twix Cookies

These cookies are one of the best ways to spice a boring old sugar cookie up!  I made up this recipe at work one day and went to the store right after to buy the ingredients.  I'm making another batch today because they are so so good! Now without further a-do here is the cast of our recipe:




1 package of sugar cookie mix
1 egg
1 stick of softened butter
6-8 fun size twix bars





Pour sugar cookie mix into big bowl (or any size bowl)





Add one egg...





And the butter
If your butter has been in the refrigerator microwave for 15-20 seconds





Cut twix bars into bite size pieces
This is about 6 twix bars





Mix dough until it is almost all the way mixed and then....





Add the fabulous ingredient!





Mix again to incorporate all the twix pieces and then form into balls like....





THIS! Place this in a 375 degree oven for about 11-13 minutes...the package says different but these are how long I cooked mine and they turned out like....

Apricot Jello Cake

So as I mentioned I'm on a little bit of this diet. So I decided to make a cake! Sounds like a good idea, right? I wanted to mess and play around with different flavors of jello poured over warm cake and then put in the refrigerator! YUM! This apricot flavor is to die for! And is awesome for those warm summer days....or if you live in Nebraska just any day since we never know what the weather will do! Hope you enjoy as much as we did! Here is the cast of our recipe:



White cake mix
1 1/4 cups water
1/3 vegetable oil
3 eggs
1/2 teaspoon vanilla
any jello flavor you want





Laura was an airhead and didn't take a picture of the mix being poured in so let's pretend that I already poured in the cake mix and now we are adding the water!





Now the eggs
3 of them





Now the vanilla...





Add oil





Beat as fast as you possibly can so you get the really cool whippy motion like I got!  Or just have a really good photographer! Hire a 9 year old! Who knew?





See? All that work whipping paid off! It's mixed now!





Pour into a greased baking dish and pop in the oven at 350 for about 27-29 minutes

Now grab a knife and take all your anger out...just kidding. Just poke holes all around so the jello can seep, (seep? strange word..) into those holes....





Heat a cup of water in the microwave for 2 minutes, add jello and stir





Pour jello over cake and place in fridge for an hour to two hours




1-2 hours later




Put Cool Whip over and eat right away! Do not wait!

Baked Chicken Fingers

I am going on a little bit of a diet.  Not really to lose that much weight but to just get in the habit of eating healthier before college... I DON'T want to revert to frozen pizza in college!  This particular recipe is a recipe that I made up myself and my family liked it alot.  It has kind of a tangy spicy flavor to it but its not a lot to burn your mouth up! Ready? Ok... here is the cast of our meal:




Boneless skinless chicken breast tenderloins (I was feeding a crowd so I got two packs of these but usually one would do)
1 cup of buttermilk
1 package of shake and bake (or two if you run out, like I did)
Salt and Pepper to taste



Salt and pepper the chicken






Pour a cup of buttermilk into a Ziploc bag add salt and pepper to the buttermilk as well





Place chicken breasts into buttermilk mixture





Move it around so it coats them well then set on counter for about 15 minutes





Pour shake and bake mixture into a plastic Ziploc bag.  Shake and Bake comes with a bag but I had used it previously so the Ziploc baggy did the trick!





Now pretend that I had a picture of shaking them in the bag but I don't so here they are on a greased baking sheet and you will place them in a 500 degree oven for about 13-15 minutes until they are no longer pink in the middle.





And here is the finished product! Serve along with your favorite dipping sauce and enjoy!:)
